I wanted to do a review on this amazing restaurant in Castle rock. Union American bistro blew my mind! My husband and I went there for the first time for our anniversary last week. My husband had called to say that it was our anniversary. We expected a free dessert or something like that which is wonderful. However, what they did instead is, they presented a bouquet of flowers to us and two glasses of champagne to toast our anniversary. What a wonderful thing to do. They even exchanged one of our drinks for apple cider because my husband doesn't drink. In addition, the food was marvelous! tender and delicious. I had the steak tenderloin and my husband salmon salad. Really good food. The service was also excellent. was very relaxing and even though it felt like it was high class. Also, the happy hour was very generous. I had a baked brie which was delicious and we had maybe the best calamari we've had in years since prior to Covid when we used to go to the fresh in Denver. Also really great blackberry margarita made in house.Really great experience. Give it a try.

This was a Valentine's meal. I love that they had a special menu and that the team was so cool. It was our first time going there so we didn't know what to expect. I would love to go back again and check out the rest of the menu. Kudos to our server and hostess that night. Thank you for the steak recommendation!

This place rocks! Easy to find and a very good menu! The burger, salads, flatbreads are delicious and don't forget to try the cheese curds. Three different seating areas with different vibes.

One of the best stops for apps and drinks. Catch their happy hour and it's even better! The servers are on point with suggestions and will be by your table frequently to keep your plates and glasses full. Want an even better experience? Grab a patio table right off the road and enjoy tue breeze too

Our first time coming earlier on a Saturday so we could enjoy happy hour, it was fun getting to try out some of the different $7 martinis. I enjoyed my Black Pearl more than the New Old Fashioned and will definitely get the Pearl again. My wife also enjoyed her Margaritatini a little better than the Key Lime she started with. The cheese curds are a staple whenever we come here. Even better on the happy hour menu. My wife had the Greek flatbread, also on the discount menu, and she liked it as well. The one downer was the new halibut entree. I didn't send it back but probably should've. The fish itself was very overcooked, dry, and tasteless. The sauce was uneven. Loose and milky tasting in parts...thicker with a strong lemon or garlic taste in other areas. It's almost like the sauce was mixed as it was poured on rather than actually stirred in advance. Green beans were nothing special either. At $38, this dish was a HUGE miss and won't be ordered again. The PB bites are still the best $2 deal in town. Quite full from everything else I consumed on my birthday, I forced myself to consume my luscious, little dessert. Service was attentive, prompt, and friendly throughout our stay. Food, other than the halibut gets a 5. The fish gets a 1. Service gets a 5.

The food is truly amazing. We took our neighbors for Happy Hour and ordered 5 Mini Dishes. The service provided by Tasha was just as awesome as the food. We asked that she would bring out all 5 dishes at the same time. Not only did she do that but also had the kitchen staff divide the dishes by four so we could all take our fair share of each dish. We are in the larger dining room that has a lot of cool art displayed.

Came here for an early Valentine's date and yet again was impressed for a 4th visit in a row! Ambiance was relaxed which was perfect for a date night. Our server was very attentive and offered feedback on the menu items we were considering. We started off sharing the Italian eggrolls and decided to try the honey sriracha infused shaved brussel sprouts as well. Both were spectacular and we ate every last bite. For our entrees we split a salad and the famous "Chop". Words are very difficult to describe how perfect that double bone pork chop is with apple chutney and cider mustard glaze. I'm just going to recommend trying it for yourself and let your eyes roll to the back of your head in utter delight. I am glad this has remained on the menu. We tried the Valentine's special chocolate cake for dessert and it was amazing as well.
